Tommy's Margarita
Origin
Julio Bermejo · Tommy's Mexican Restaurant, San Francisco
The agave-forward margarita that converted bartenders away from triple sec
The agave-forward margarita — no triple sec, just tequila, lime, and agave.
Ingredients
- 2 oz Blanco Tequila
- 1 oz fresh Lime juice
- 0.5 oz Agave Syrup
Instructions
- Combine all ingredients in a shaker with ice.
- Shake vigorously for 10–15 seconds.
- Strain into a rocks glass over fresh ice.
- Garnish with a lime wedge, optional.
Tips
- Use 100% agave blanco tequila — the spirit is the whole drink.
- Cut agave syrup with a little water (2:1 agave to water) for easier mixing.
- Skip the salt rim; it competes with the agave.
Notes
Julio Bermejo created Tommy's Margarita at his family's restaurant, Tommy's Mexican, in San Francisco. Published widely in the late 1990s, it converted a generation of bartenders away from triple sec.
