1876

First published as the 'Tom Collins' in the second edition of Jerry Thomas's Bartender's Guide (1876), likely renamed from the earlier John Collins (attributed to John Collins, headwaiter at Limmer's Hotel, London) after the call for Old Tom gin. The 1874 'Tom Collins Hoax' may also have spurred the name.

A tall, refreshing gin lemonade with bubbles.

Ingredients

  • 2 oz Gin
  • 1 oz fresh Lemon juice
  • ½ oz Simple Syrup
  • Soda Water

Instructions

  1. Combine gin, lemon juice, and simple syrup in a shaker with ice.
  2. Shake briefly for 8–10 seconds.
  3. Strain into a tall glass filled with ice.
  4. Top with soda water and stir gently.
  5. Garnish with a lemon wheel.

Tips

  • Essentially a gin sour lengthened with soda.
  • Use a Collins glass (tall and narrow) for the classic look.
