Equal parts bourbon, Aperol, Amaro Nonino, and lemon — bittersweet and perfectly weighted.

Ingredients

  • 0.75 oz Bourbon
  • 0.75 oz Aperol
  • 0.75 oz Amaro Nonino
  • 0.75 oz fresh Lemon juice

Instructions

  1. Combine all ingredients in a shaker with ice.
  2. Shake vigorously for 10–15 seconds.
  3. Fine-strain into a chilled coupe glass.

Tips

  • Amaro Nonino is the keystone — substitutes change the drink significantly.
  • A high-proof bourbon stands up better against the amari.

Sam Ross built the Paper Plane for the 2008 opening of Toby Maloney's Violet Hour in Chicago. Named for the M.I.A. song, it sits in a direct line from the Last Word — equal parts, four ingredients, perfectly balanced.
